"I saw lots of vegetarian sites, and yours was one of the best."
"Picadillo is a hash-like dish enjoyed throughout Latin American countries. It typically includes rice, onions, and chiles among other flavorful ingredients including almonds and olives. This version adds a touch of curry and uses black-eyed peas, although kidney beans, chopped seitan, or steamed tempeh may be used instead."
SV NOTE: I chose Picadillo as a sample recipe to go with the SV Review of Vegan Fire and Spice. All the recipes are sturdy, easy, and flexible - but especially Picadillo.
I left out the onions, substituted green beans for peas, cashews for almonds, olives for raisins, green curry paste for curry spice, olive oil for canola oil, and half a jalapeno pepper for the hot chiles. I used more cumin, and less cayenne. And it was still extremely delicious!
The recipe below is as written in Vegan Fire and Spice, but Robin says you should feel free to play with it - or any of her recipes.
