Simple Delicious Quinoa Breakfast Recipe

Healthy Breakfast Recipe: How to cook quinoa in a delicious vegan breakfast

This simple quinoa breakfast recipe calls for cooked quinoa, simmered with non-dairy milk, dried fruit, nuts or seeds, and optional sweetener.

Quinoa For Breakfast

Don't know how to cook quinoa? Here's the basic quinoa recipe. Use some for your breakfast quinoa and some to eat with Tofu Bok Choy Stir Fry!

Cooking Tips: If you don't have cooked quinoa, but want to eat this quinoa breakfast recipe NOW, just cook everything along with the raw quinoa. Use 1/4 cup raw quinoa, and add the other ingredients along with 1/2 cup water. Feel free to double the recipe so you can eat quinoa for breakfast again tommorrow!

4 - 6 Servings: The recipe proportions given below will serve two people, or one who's very hungry. This simple quinoa breakfast cereal takes about 15 minutes to prepare.

Ingredients:

  • 1 cup or so cooked quinoa
  • 2 Tbsp sunflower seeds, pumpkin seeds, or slivered almonds (softer & sweeter when soaked overnight)
  • 2 Tbsp raisins
  • 2 Tbsp chopped dried apricots
  • Substitute dried cranberries, currants, blueberries, chopped figs or dates as you like
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup almond, hemp or soy milk, flavored or plain - add more as needed
  • Optional: 1 Tbsp maple syrup, brown rice syrup or other sweetener

Directions:

  1. Combine all ingredients in a two quart saucepan
  2. Heat on medium-low, stirring, until the quinoa has soaked up the liquid, and the dried fruit has plumped up nicely
  3. Add more milk if needed until the consistency pleases you
  4. That's it. Enjoy!
