Roasted Rosemary Garlic Potatoes Recipe: One of those foods that taste so good, you want to live on them, but you know you can't if you don't want to gain a pound a day.

Roasted Rosemary Garlic Potatoes

So, we started National Potato Day, which is celebrated whenever we get an overwhelming craving for roasted rosemary garlic potatoes. That's why we call this a Holiday Recipe!

Roasted potatoes are divine by themselves, but also go well with ketchup, Tofu Burgers And Fixins', and a crispy sweet Carrot Apple Salad. No dessert is necessary!

6 - 8 Servings Roasted Rosemary Garlic Potatoes

Ingredients

  • 8 large waxy potatoes, such as Yukon Gold
  • Olive oil to coat
  • 1 - 2 tsp dried lightly crushed rosemary leaf
  • 5 - 6 cloves garlic, peeled & minced (more if you're a big garlic fan)
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 425 degrees
  2. Scrub the potatoes well - peeling is optional
  3. Cut each potato in 8 wedges
  4. Line a large roasting pan or jelly roll pan (cookie sheet with sides) with parchment paper (prevents potatoes from sticking to the pan)
  5. Drizzle olive oil over them, and stir to coat with oil
  6. Bake for 15 minutes
  7. Remove from oven, toss with rosemary, garlic, salt & pepper to taste
  8. Bake another 10 - 15 minutes, until golden brown and crispy
