Our easy, healthy salad recipes are delicious any time, and make ideal summer meals, especially for vegans or vegetarians.

When you don't want to cook, salad is a quick nourishing meal - and a great way to use leftover grains like quinoa or rice.

Salads may be raw, as in Green Power Salad or cooked, as in Red Lentil and Rice Salad. Salads can be made ahead, to eat cold, and are easy to take along.

Salads are easy summer recipes - refreshing and satisfying. We like to make a big bowl of Tasty Pasta Salad in the morning, pop it in the fridge and eat it for a couple of days. Quinoa Black Bean Salad is also a favorite.

Salads can be party snacks or appetitzers, raw veggies arranged lovingly on a plate, served with hummus or vegan sour cream dip, or pesto

Salads can be calorie laden or low fat. Salads can be fruit or vegetable, green, yellow, red, white or a rainbow. Salad recipes are limited only by what's available, and your own taste. If you choose to live on salad, that's possible too.
