Soups can be sublimely beautiful and divinely delicious, or truly awful. And it doesn't take much to go from one to the other. The pitfalls are: too much or too little liquid, not enough salt or spice, undercooked or unidentifiable ingredients; tasteless, colorless soupstock (a.k.a. water).
But, once you have the basics, soups are flexible, fun and creative to make, simple to make from scratch without a recipe, and one of the most soul-satisfying foods to eat. Almost any soup can easily become vegan, with simple substitutions and deletions.
All of our soup recipes are vegan - soups naturally tend that way. But of course, they can be eaten with both vegetarian and non-vegetarian meals. If you have questions about any of the recipes, please contact us, and we'll respond asap.
