Melt-In-Your-Mouth Delicious Holiday Appetizer Recipe

Our vegan stuffed mushrooms are an ideal holiday appetizer. Just be sure to serve them immediately before the meal, and possibly dole them out, or your guests will dine on them, and forget about the meal! It's impossible to stop at one stuffed mushroom.

Did you know that mushrooms are an aphrodisiac? Well, rumor has it! Our 10 Best Holiday Menus Recipe Collection features stuffed mushrooms as part of the Valentine's Day Menu, along with Cream of Asparagus Soup, Chocolate Cake and other divine treats.

15 - 20 Stuffed Mushrooms, depending on size

Ingredients:

  • 15 - 20 button mushrooms
  • 1 small zucchini, chopped in small dice
  • 1/2 cup finely chopped onion
  • 1 piece bread, diced
  • 1/4 cup finely chopped cashews
  • 1 tsp vegan grated parmasan cheese OR: nutritional yeast
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 4 Tbsp melted Earth Balance veggie spread

Directions:

  1. Preheat oven to 350 degrees
  2. Wash mushrooms and remove stems
  3. Melt veggie spread
  4. Add other ingredients and stir
  5. Spoon stuffing into mushroom cavities
  6. Bake uncovered for 15-20 minutes in a metal or glass baking dish
