Tofu, Love It or Leave It

When people go vegetarian, tofu is often the first food they turn to as a replacement for meat in a vegetarian diet. These easy delicious vegetarian tofu recipes are great ways to get your family and friends to enjoy eating tofu.

Tofu is one of the best protein sources on the planet, and the most easily digested form of soy, but people don't automatically become tofu lovers on going vegetarian. Tofu takes getting used to, and some people shouldn't eat soy at all. Most people should eat very little soy - it's nutritious, but has a dark side. The good news is, if you don't like tofu, you won't die of malnutrition on a vegetarian diet. There are plenty of other beans in the field - try some of SV's delicious bean recipes

Tofu is both nutrient dense and high calorie: 2 - 4 oz is a serving. Since it's kind of heavy, and can cause gas, eat just a little tofu to start with until you see how well you tolerate it.
